Day 5 Breakfast and Tea

I am one of those people who wakes up hungry. Before my gut began to heal I woke up STARVED every morning. The best way to wake me has always been with food. Pancakes, eggs, hash brows, eggs benedict, country potatoes, and Maple and Brown Sugar oatmeal. I was a happy girl if you said any of these things were available AND I did not have to make it. Well I still wake up hungry and if I know I have something I can easily prepare I am a far happier girl! This is my breakfast of choice.

 

Rice Pudding

It is so easy to make too! If you want to try it out all you need is-

  • Rice about 2 cups precooked (I cook mine the night before in a big batch and put it in the fridge for as long as it last normally about 5 days if I make three cups dry)
  • Milk alternative about 2 cups more or less depending on how thick you like it (we use Almond, Hemp, Coconut or Sunflower)
  • Sea Salt
  • Fresh or Dried fruit for topping
  • Maple Syrup (OPTIONAL)

To Prepare you Need;
  • Immersion Blender (you can also place cold ingredients in a blender and blend until smooth)
  • 3qt Sauce Pan (or something of similar size :) )  

  1. Place Rice and Milk alternative in a pot and use your immersion blender to blend the rice and milk until smooth.
  2. Heat over medium stirring often, it takes about 5 mins to heat through.
  3. Serve in a bowl with salt and fruit on top! If your feeling fancy add a dash of Maple Syrup. Its like dessert for breakfast!  
 
We buy our rice in bulk on Amazon and store it in glass jars to keep it fresh!
 
 
Also here is a song that gives me courage when things get tough. When the rice scorches cause the baby pooped on the floor, when I get glutened at a restaurant, when I am feeling overwhelmed by this life. It gives me peace.
